Ingredients
- Garlic - 2 cloves
- Potatoes - 500 g
- Tomatoes - 150 g
- Thyme - 1 tsp
- Spinach - 100 g
- Carrots - 150 g
- Salt - to taste
- Pepper - to taste
- Tofu - 300 g
- Olive Oil - 2 tbsp
Directions
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Cut the potatoes into cubes and place them on a baking tray.
Step 3
Toss the potatoes with olive oil, salt, pepper, and thyme.
Step 4
Bake for 15 minutes, stirring halfway through.
Step 5
In the meantime, dice the tofu and sauté in a pan with olive oil until golden brown.
Step 6
Add sliced carrots and tomatoes to the pan and cook for 5 minutes.
Step 7
Once the potatoes are done, add them to the pan with tofu and vegetables.
Step 8
Stir in fresh spinach and cook for 2-3 minutes until wilted.
Step 9
Serve warm as a wholesome, balanced meal.
Cook's Notes
Sprinkle with sesame seeds for extra crunch and flavor.
