- Tomatoes - 150 g
- Chicken Breast - 500 g
- Batat - 500 g
- Lemon - 1 pieces
- Spinach - 100 g
- Carrots - 200 g
- Salt - to taste
- Pepper - to taste
- Olive Oil - 3 tbsp
Directions
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
Step 3
Cut the potatoes, tomatoes, and carrots into bite-sized pieces.
Step 4
Place the vegetables and potatoes on a baking tray and drizzle with olive oil.
Step 5
Place the chicken breasts on top of the vegetables.
Step 6
Slice the lemon and lay the slices over the chicken.
Step 7
Roast in the oven for 35-40 minutes until the chicken is cooked through and the potatoes are golden.
Step 8
Garnish with fresh spinach before serving.
